The Restaurant Trade and its Menus: Food, Food Suppliers and the Public

Customers are increasingly concerned with where their food comes from. Scandals in the press have highlighted specific issues with the way in which food is presented; and a general concern with sustainability and quality of ingredients has pervaded the marketplace over the last few years regardless. Media presentation of particular areas of food service – school dinners, for instance – has further outlined the components of what we eat. Plus, of course, most restaurants and pubs have always had a concern with where their food comes from, as the food they use is ultimately the base product assuring the quality of their menus.
