<h2>Ingredients:</h2>
<ul>
<li>3 large green apples</li>
<li>¼ cup lemon juice</li>
<li>3 cups water</li>
<li>1 kg (2lb) sugar</li>
</ul>
<h2>How to Prepare:</h2>
<ol>
<li>Wash and hull strawberries.</li>
<li>Peel, quarter and core apples, cut quarters into very thin slices.</li>
<li>Put halved strawberries, apples, lemon juice and water into large pan.</li>
<li>Bring to boil, reduce heat, simmer covered for 20 minutes or until apples are very tender.</li>
<li>Put sugar into baking dish, place in moderate oven for 5 minutes.</li>
<li>Add sugar in strawberry mixture, stir until sugar is dissolved.</li>
<li>Increase heat, bring mixture to boil, boil steadily uncovered for 25 minutes or until jam jells when tested on cold saucer.</li>
<li>Pour into hot sterilized jars; seal.</li>
<li>Makes approximately 1.5 litres.</li>

<h2>Ingredients:</h2>
<ul>
<li>1 medium papaw, approximately 750g</li>
<li>(1½lb), not too ripe</li>
<li>90g (30z) preserved ginger</li>
<li>½ cup lemon juice</li>
<li>2 cups sugar</li>
</ul>
<h2>How to Prepare:</h2>
<ol>
<li>Peel papaw, remove seeds, chop roughly.</li>
<li>Put papaw and chopped ginger into pan, add lemon juice, bring to boil.</li>
<li>Boil until fruit is tender, approximately 5 minutes.</li>
<li>Reduce heat, add sugar, stir over low heat until sugar is dissolved.</li>
<li>Bring to boil.</li>
<li>Boil rapidly uncovered for 25 minutes or until jam jells when tested on cold saucer.</li>
<li>Stir jam occasionally during cooking time.</li>
<li>Pour jam into hot sterilized jars.</li>
<li>Makes approximately 625ml (2½ cups).</li>

<li>500g (1lb) dried apricots</li>
<li>1 small pineapple</li>
<li>1.5 liters (6 cups) water</li>
<li>¼ cup lemon juice</li>
<li>1 kg (2lb) sugar</li>

<h2>How to Prepare:</h2>
<ol>
<li>Chop apricots roughly.</li>
<li>Put apricots and water into large bowl, allow to stand 2 hours.</li>
<li>Put apricot mixture into large saucepan, bring to boil, reduce heat; simmer, covered, for 30 minutes.</li>
<li>Add peeled, cored and finely chopped pineapple, cover, simmer a farther 15 minutes.</li>
<li>Put sugar into large baking dish, place in moderate oven for 7 minutes.</li>
<li>Add sugar to apricot mixture, stir until sugar is dissolved.</li>
<li>Add lemon juice, bring to boil, reduce heat so that mixture is at a fast simmer; cook for 30 minutes or until jam jells when tested on cold saucer.</li>
<li>Stir jam frequently during cooking time.</li>
<li>Pour into hot sterilized jars; seal.</li>
<li>Makes approximately 2 liters.</li>

<h2>Ingredients:</h2>
<ul>
<li>1.5kg (3lb) tomatoes</li>
<li>500g (1lb) apples (approximately 3 medium apples)</li>
<li>1 tablespoon grated lemon rind</li>
<li>⅓ cup lemon juice</li>
<li>1.25kg (2½lb) sugar</li>
</ul>
<h2>How to Prepare:</h2>
<ol>
<li>Skin tomatoes and cut into thin slices.</li>
<li>Put tomatoes, peeled, cored and thinly sliced apples and grated lemon rind into large saucepan, cover, bring to boil, reduce heat, simmer 30 minutes.</li>
<li>Put sugar into baking dish, place in moderate oven for 7 minutes.</li>
<li>Add sugar and lemon juice to tomato mixture, stir until sugar is dissolved.</li>
<li>Bring to boil.</li>
<li>Boil approximately 40 to 45 minutes or until jam jells when rested on cold saucer.</li>
<li>Stir jam occasionally during cooking time.</li>
<li>Pour into hot sterilized jars; seal.</li>
<li>Makes approximately 1.5 liters.</li>

<li>6 oranges (about 1 kg)</li>
<li>2 lemon (about 5 mg)</li>
<li>1.5 litres (6 cups water)</li>
<li>2 kg (4lb) sugar</li>
<li>¼ cup whiskey</li>

<h2>How to Prepare:</h2>
<ol>
<li>Cut fruit into quarters.</li>
<li>Cut each quarter into thin slices.</li>
<li>Put fruit into large bowl, add water, cover bowl, allow to stand overnight.</li>
<li>Next day, put fruit with the water into large pan, bring to boil, reduce heat, simmer covered for 20 minutes or until rind is very tender.</li>
<li>Put sugar into baking dish, place in moderate oven for 7 minutes.</li>
<li>Add sugar to fruit mixture, stir until dissolved.</li>
<li>Bring to boil, boil uncovered for about 30 minutes or until jam jells when tested on cold saucer.</li>
<li>Add whiskey, stir until combined, remove from heat.</li>
<li>Pour into hot sterilized jars; seal.</li>
<li>Makes approximately 2 liters.</li>

<li>Stir jam occasionally during cooking time.</li>
<li>Pour jam into hot sterilized jars.</li>
