<h2>Ingredients:</h2>
<ul>
<li>3 eggs, separated</li>
<li>½ cup sugar</li>
<li>1 cup cream</li>
<li>2 tablespoons Marsala (or cointreau or grand mariner)</li>
<li>2 tablespoons water</li>
</ul>
<h2>How to Prepare:</h2>
<ol>
<li>Put egg yolks, sugar, Marsala and water in heatproof bowl.</li>
<li>Beat over hot water until mixture is lukewarm.</li>
<li>Remove from heat, beat until fluffy and cool, approximately 10 minutes.</li>
<li>Whip cream until firm, fold into Marsala mixture.</li>
<li>Whip egg whites until soft peaks form, fold into Marsala mixture.</li>
<li>Spoon mixture into deep 20cm (8in) tin.</li>
<li>Cover with aluminium foil, freeze until firm, stirring occasionally to combine Marsala and cream mixture.</li>
<li>Delicious served as an accompaniment to chocolate souffle (see index).</li>
</ol>

<ul>
<li>2*470g (150z) cans cherries</li>
<li>¼ cup sugar</li>
<li>1 cup water</li>
<li>2 cups rose wine</li>
</ul>
<h2>How to Prepare:</h2>
<ol>
<li>Drain cherries, reserve syrup.</li>
<li>Put sugar and water into saucepan, stir over low heat until sugar dissolves.</li>
<li>Bring to boil; reduce heat, simmer 5 minutes.</li>
<li>Remove from heat, cool.</li>
<li>Add wine and ¾ cup of reserved cherry syrup.</li>
<li>Pour into two freezer trays, freeze overnight.</li>
<li>Combine cherries and remaining syrup in bowl; cover, refrigerate until serving time.</li>
<li>To serve, put cherries in individual glasses, pour over some of the syrup.</li>
<li>Flake ice with fork, spoon over cherries.</li>
</ol>

<h2>Ingredients:</h2>
<ul>
<li>1 punnet strawberries</li>
<li>1 cup water</li>
<li>½ cup castor sugar</li>
<li>2 tablespoons lemon juice</li>
<li>2 tablespoons grand marnier or cointreau</li>
</ul>
<h2>How to Prepare:</h2>
<ol>
<li>Put water, sugar, lemon juice and grand marnier or cointreau into electric blender.</li>
<li>Add washed and hulled strawberries.</li>
<li>Blend on medium speed 2 minutes.</li>
<li>Push strawberry mixture through fine sieve into 28cm by 18cm (1lin by 7in) lamington tin.</li>
<li>Freeze.</li>
<li>When ready to serve, remove from freezer.</li>
<li>Run fork across ice so that it flakes and separates.</li>
<li>Fork into individual serving glasses.</li>
<li>It&#8217;s a good idea to refrigerate glasses for an hour or so beforehand.</li>
<li>The ice will not melt as quickly in cold glasses.</li>
</ol>

<li>Peel apples, cut into quarters, remove cores, cut into slices.</li>
<li>Melt butter in frying pan, add sugar, stir until combined.</li>
<li>Add apples, stir until apples are coated with caramel.</li>
<li>Add remaining ingredients, bring to boil, boil 3 minutes.</li>
<li>Serve with cream.</li>

<li>3 eggs, separated</li>
<li>½ cup sugar</li>
<li>2 teaspoons gelatine</li>
<li>1 tablespoon water</li>
<li>⅓ cup fresh lime or lemon juice</li>
<li>¼ cup dry white wine</li>
<li>2 teaspoons creme de menthe</li>
<li>850g can mango slices</li>
<li>1 cup cream</li>
</ul>
<h2>How to Prepare:</h2>
<ol>
<li>Beat egg yolks and sugar until light and creamy.</li>
<li>Stir in top of double saucepan over simmering water until sugar dissolves and mixture is thick.</li>
<li>Sprinkle gelatine over water, dissolve over hot water, add to egg yolk mixture, remove from heat.</li>
<li>Add lime or lemon juice, white wine, creme de menthe; cool.</li>
<li>Add drained and mashed mangoes.</li>
<li>Then fold in whipped cream and softly beaten egg whites.</li>
<li>Spoon mixture into large serving dish or six individual dishes, refrigerate until set.</li>
<li>Decorate with extra whipped cream and slices of lime or lemon.</li>
</ol>

<li>Bake in moderate oven 35 minutes.</li>
<li>Remove from oven, sprinkle with topping.</li>
<li>Return to oven for 10 minutes.</li>

<li>Combine sugar and cinnamon.</li>

<li>Sift flour and salt into bowl, add sugar; rub in butter.</li>
<li>Add water, mix to a soft dough; a little extra water may be needed.</li>
<li>Peel, quarter and core apples.</li>
<li>Divide pastry into 8 equal portions, carefully press each portion of pastry round an apple quarter.</li>
<li>Put in ovenproof dish, pour sauce over.</li>
<li>Bake, uncovered, in moderate oven 25 to 30 minutes or until pastry is golden.</li>
<li>Serve warm with ice-cream or cream.</li>

<li>2½ cups milk</li>
<li>3 eggs</li>
<li>1 tablespoon sugar, extra</li>
<li>1 tablespoon grated grated lemon rind</li>
<li>1 cup sultanas</li>
<li>TOPPING</li>
<li>30g (10z) butter</li>
<li>2 tablespoons coconut</li>
<li>3 tablespoons sugar</li>
<li>½ cup self-raising flour</li>
</ul>
<h2>How to Prepare:</h2>
<ol>
<li>Peel and core apples, cut into slices.</li>
<li>Place apples, sugar and water in saucepan; cook, covered, 5 to 10 minutes until apple is reduced to pulp.</li>
<li>Butter bread lightly, remove crusts.</li>
<li>Arrange slices in layers in greased ovenproof dish; spread each layer generously with apple pulp and sprinkle with lemon rind and sultanas.</li>
<li>Beat together eggs, milk and extra sugar, pour over bread.</li>
<li>Let stand 15 minutes, then sprinkle topping over.</li>
<li>Bake in moderately slow oven 40 minutes.</li>
<li>Serve with cream or custard.</li>
</ol>
<h2>Topping:</h2>
<ol>
<li>Sift flour, add coconut and sugar.</li>
<li>Rub in butter until mixture resembles breadcrumbs.</li>

<li>Make a slit around center of apples so that apples do not burst during cooking.</li>
<li>Place apples in ovenproof dish.</li>
<li>Sprinkle over combined cinnamon, sugar and flour.</li>
<li>Add water to pan and place a piece of butter in top of each apple.</li>
<li>Bake uncovered in moderate oven 1 hour or until apples are tender.</li>
<li>Stir sauce occasionally during cooking time.</li>

<li>Wash and trim rhubarb, cut into 2.5cm (1in) pieces.</li>
<li>Peel and core apples, cut into quarters, slice thinly.</li>
<li>Put rhubarb and apple in saucepan with sugar and water.</li>
<li>Cook, covered, over medium heat until tender (approximately 10 to 15 minutes).</li>
<li>Spoon rhubarb mixture into one large or 4 individual heatproof dishes, sprinkle topping over rhubarb.</li>
<li>Bake in moderate oven 10 to 15 minutes or until topping is golden brown.</li>
<li>Serve topped with whipped cream or with ice-cream.</li>
</ol>
<h2>Crumble Topping:</h2>
<ol>
<li>Combine cornflakes, coconut, brown sugar and condensed milk.</li>
<li>Mix well.</li>
